This juicy and sweet small tomato is part of the gastronomic tradition of its region: it was the main ingredient that all families, even in urban areas, used to prepare the tomato sauce for the winter. Yet, despite its historical importance, the Fiaschetto tomato came close to disappearing: growing it was too expensive and its yields were too low compared to modern hybrids developed for sauce making. Thanks to a careful search in the private vegetable gardens of the area of Torre Guaceto, Fiaschetto plants were found and were used to reintroduce this refined tomato variety.
